5 Minute Black Bean Soup

4 c. water
1 16 oz jar of roasted tomato salsa or any salsa that you like.
1 can organic black beans
1 tsp. cumin
1 potato cubed
½ c. frozen corn
handful of fresh cilantro chopped

You can also add any other vegetable you like to this but it will increase your chopping time. ☺
Put all the above ingredients except the cilantro in to a pot and bring to boil.  Lower heat and simmer until the potato is done about 20-25 minutes.
Serve with the cilantro garnish.

  1. I tried the soup and it was amazing, especially the 2nd day after the flavors had a chance to blend more. I used a very spicy roasted salsa but next time I’ll use a milder one—the spicy one overpowered the other flavors a bit. I also used the roasted frozen corn from Trader Joe’s which worked very well. I served it with cornbread and sliced avocados on the side. We enjoyed it very much!
