Quick and Light Summer Lunch

I threw this together today while my client was sitting with color on. This was quite a hit with the kids too. Try it when you are pressed for time or short on ingredients.
Quick and Light Salad

Here’s what you’ll need:
3 persian cucumbers
about 1/2 package cherry tomatos
1 can of garbanzo beans
handful of chopped cilantro
6-8 kalamata olives
Salt and Pepper to taste
Juice of 1/2 lemond
drizzle of EVOL
and a dash of Herbs de Provence

Chop everything and toss together then put the asparagus on a very hot pan and let it brown on high heat and turn over regularly to brown it even.
You can also add a dallop of hummus to the plate too 🙂
