This Tabouli is made with 100% vegetables, no nuts, seeds or grains. I created it today and it turned out really good. My kids even had seconds.
Use about 1-2 bunches of parsley (finely chopped)
3 tomatoes, chopped
3 persian cucumbers, chopped
2 green onions, sliced
1/2 of a head of cauliflower cut into small pieces
Dressing:
1/4 c. extra virgin olive oil
juice of 1 lemon
hand full of fresh mint
1 small clove of garlic (optioal)
1 tsp sea salt
Put the cauliflower into the food processor and process until evenly chopped into very fine texture.
Empty it into a bowl, then add the parsley and pulse it until finely chopped and add to the bowl.
Chop the tomatoes, cucumbers and green onions and add them to the bowl as well.
For the dressing, add all the ingredients to your blender and run until well mixed, pour it over the salad and mix well and enjoy.
