Cauliflower Couscous

1 small cauliflower or half of large one.

1 tomato (Finely chopped) I use the Vidalia Chop Wizard

8-10 pitted Kalamata Olives (sliced)

about 1/4 c. dehydrated mushrooms (recipe posted)

handful of chopped fresh cilantro

handful of chopped fresh dill

handful of chopped fresh mint

1/8 c. Olive Oil

1/2 tsp Mary-Ann’s herb salt (contact me if you’d like to purchase this item)

1/4 tsp. Mary-Ann’s seasoning salt (contact me if you’d like to purchase this item)

juice of 1/2 lemon

Everything is to taste, you can add more of or delete any of the ingredients.

Some other options would be to add green onions and/or pine nuts.

Directions:

Cut the cauliflower into small pieces and put it into your food processor. Pulse it until it is evenly chopped very fine. Transfer to a bowl.  Add the rest of the ingredients and you are done. You can enjoy this in a lettuce leaf.
