Coconut Banana Chia Pudding

My new favorite and so easy to make.  It’s Also good for you, full of fiber & good oils and NO sugarIMG_5681!  I got inspired to make this after I ordered a very similar desert at True Food in Santa Monica, CA

PPREP TIME:  2-3 hours chilling time

Ingredients:

12 oz or about 3/4 of a can coconut cream (Trader Joes)
1/2 cup chia seeds

1/2 cup water
1/8 tsp stevia or less (banana makes it sweet so taste first)

1 banana

1 Tbs. vanilla extract (Trader Joes)

Toasted coconut chips, for garnish

Directions:

In a blender blend the all the ingredients leaving the chia seeds and the garnish out. once blended transfer to a glass storage dish, add the chia seeds mix well. Chill in the refrigerator for at 2-3 hours, or until the chia seeds puff and expand. Stir one more time and spoon into serving dishes. Garnish with toasted coconut and serve.
